Ingredients
1/2 cup Coconut Oil plus 1tbsp
1 cup Coconut Flour
1 tsp Vanilla Extract
Gelatin - I prefer Grass-Fed Beef gelatin by Vital Proteins
Raw Light Honey
Water
1 package Chocolate Chips (Dairy + Grain free if paleo)
Set oven to 325 degrees. Combine coconut oil with 1 tsp vanilla extract, and coconut flour. I like using a fork to mix well. Prepare a 11x8 pan with parchment paper.
Place mixture into the prepared pan, and press down. Bake until golden, about 20 minutes. Place aside to cool.

Work quickly! Pour the marshmallow onto the cooled shortbread bars and spread flat.
Allow the marshmallow to set up for 3 hours, and chill in the fridge.
Cut into bars.
Melt chocolate with remaining tbsp of coconut oil. You can either dip the bars, or layer the chocolate on top.
